A Natural, Creative, and Customizable Product
Made with fresh fruit or natural syrups, artisan ice pops allow gelato makers to unleash their creativity by experimenting with flavors, colors, and combinations to please every type of customer. Depending on the available equipment and workflow, there are two main production methods:
1. Using a Non-Freezing Solution
This method is widely used by professionals as it speeds up production and reduces energy consumption compared to relying solely on a blast freezer.
Step-by-step process:
- Fill a container with a solution of water and calcium chloride (non-freezing liquid).
- Chill the container in a refrigerator, freezer well, or blast freezer.
- Prepare the ice pop mix, usually made from a syrup of water and sucrose (60%) and your choice of fruits, juices, or natural flavorings.
- Pour the mixture into ice pop molds and insert the wooden sticks.
- Place the molds into the chilled container with the non-freezing solution.
- Wait about 20 minutes for the mixture to solidify.
How to remove the ice pops:
- Use a manual extractor, or dip the mold briefly into warm water to release the pops without damage.
- Store the pops in food-safe packaging bags.
2. Using a Blast Freezer
This alternative is simple, clean, and ideal for those who prefer to avoid using a non-freezing solution.
Step-by-step process:
- Prepare the base syrup (water and sugar) and chill it properly.
- Mix in the chosen ingredients (blended fruits, natural juices, spices, or extracts) to create your custom blend.
- Pour the mix into molds with sticks.
- Place the molds in a blast freezer for approximately 2 to 3 hours.
Removal and storage:
- Remove the ice pops using warm water or a dedicated extractor.
- Package them in individual bags for storage and sale.
