Basic Crepes Recipe

Crepes are a classic dessert that perfectly complement high-quality artisanal gelato. They are simple to make and versatile, ideal for serving with a variety of gelato flavors. This recipe yields about 10 to 15 sweet crepes, depending on the size of your pan.

Ingredients

  • 300 grams all-purpose flour
  • 3 whole eggs
  • ½ liter (500 ml) milk
  • 50 grams butter
  • 2 tablespoons sugar
  • 1 tablespoon rum
  • A pinch of salt

Preparation

  1. In a large bowl, place the flour and eggs without mixing them initially.
  2. Gradually add the milk while continuously whisking until the batter is smooth and homogeneous.
  3. Add the sugar, melted butter, rum, and a pinch of salt, then mix well.
  4. Cover the bowl with a cloth and let the batter rest for about one hour.
  5. Heat a crepe pan or a regular non-stick skillet with low edges, lightly greased with some butter.
  6. Pour half a ladle of batter into the pan and rotate it to evenly coat the bottom.
  7. Cook for about one minute until the edges begin to lift. Flip the crepe with a spatula and cook for another one to two minutes on the other side.
  8. Stack the cooked crepes on a serving plate as you go.

  • Crepes with banana slices, coconut flakes, and chocolate gelato
  • Crepes with orange sorbet and a splash of Grand Marnier
