Gelato as a Complete Nutritional Food

Balanced, wholesome, and suitable as a meal replacement or a healthy snack
A scientific study conducted by the University of Milan confirms that artisan gelato is a well-balanced and nutritionally complete food. It can even replace a full meal or serve as a rewarding yet non-fatty snack.

About the Study
Commissioned by AIIPA, ACOMAG, and SIGEP Rimini—organizations deeply involved in promoting quality artisan gelato—the University of Milan analyzed multiple artisan gelato samples. The study aimed to precisely measure and assess the composition, including the percentage and quality of fats, sugars, proteins, vitamins, minerals, and antioxidants.

This research was led by Professor Marisa Porrini from the Department of Food Science and Technology and Professor Michele Carruba, Director of the Obesity Research Center at the University of Milan. Their goal was to scientifically demonstrate the nutritional qualities of artisan gelato and evaluate its suitability as a food for all age groups.

Flavors Tested
The study focused on the five most popular gelato flavors among Italians—chocolate, cream, hazelnut, strawberry, and lemon—to balance fruit and cream types. Additionally, wild berries were included due to their high vitamin content and antioxidants such as anthocyanins and flavonoids, which offer protective health benefits.

Nutritional Comparison with Other Foods
The data reveal that 100 grams of cream gelato contains approximately 220 calories, while fruit gelato has around 100 calories. By contrast, 100 grams of dark chocolate has 542 calories, toasted bread slices 410, Nutella 537, jam tart 339, snack cakes between 350 and 460 (depending on ingredients), and popcorn about 383 calories.

Balanced Macronutrient Profile
Artisan gelato stands out among desserts because it maintains an excellent balance between proteins, carbohydrates (sugars), and fats. For instance, 100 grams of chocolate gelato contains approximately:

  • 4.3 grams of protein
  • 8.1 grams of lipids (fats)
  • 2.3 grams of fiber
  • 23.6 grams of total sugars

Thanks to this nutritional balance, artisan gelato can rightly be considered a valid meal substitute or an ideal snack. It is especially suitable for children due to its wholesome, genuine, and healthy nature.
