Regarding texture, the spatula should glide smoothly and slowly through the gelato, which should appear creamy and easy to scoop. Moreover, properly made and stored gelato neither melts too quickly nor remains too hard for long.
The Definitive Palate Test
When tasting, check that the gelato has a uniform and smooth consistency, free from ice crystals, chunks, or an "evanescent" texture. Artisan gelato should feel light on the palate.
