Phase 5 – Storage and Display of Artisanal Gelato

For artisanal gelato of high quality, proper storage plays a crucial role, along with the right methods for displaying the finished product without compromising its flavor, texture, or appearance.

From ingredient selection and mixing, through pasteurization, homogenization, maturation, and churning, the artisanal gelato-making process is almost complete. But the final step concerns how the gelato is stored.

When the gelato mixture exits the churner, its temperature is around -8 to -10°C (17.6 to 14°F). However, it cannot be stored at this temperature for too long without losing the texture achieved during churning. Even after freezing, gelato requires further chilling to reach its definitive consistency. The key to proper hardening is the use of blast chillers that bring the product down to -20°C (-4°F), significantly reducing the amount of unfrozen water that would otherwise cause a loss of creaminess and volume. Once the gelato reaches the ideal firmness, optimal storage conditions can be maintained.

Generally, artisanal gelato should be stored at temperatures of at least -18°C (0°F). If the product is consumed within the same day—which is more common for home producers—it can be kept at slightly higher temperatures than those used for hardening. For longer-term storage, however, maintaining the hardening temperature strictly is essential, ensuring a consistent cold chain. Temperature fluctuations cause the gelato’s structure to collapse and ice crystals to form, which degrade texture and quality when consumed.

Lastly, careful presentation of artisanal gelato should not be underestimated. For home tasting, such as during a gathering with friends or as a dessert for a special dinner, it is best to remove the gelato from the freezer and place it in the refrigerator for about 15 to 30 minutes before serving. Creating an appealing effect is easy: use charming bowls and garnish with fruits, creams, chocolate, or nuts. An original serving idea is to present gelato in slices: simply invert the gelato container onto a tray, slice it, and decorate with desired toppings.
